1. fry eggplant
- soak in water 30min
- salt and pepper
- flour (w salt/pepper) coat
- eggs (w salt/pepper) coat
- fry in oil
2. combine in pan
- 1/2 marinara
- eggplant layer, marinara layer, mozorella and pecorino romano. repeat 2x
- top with parsley
3. cook 20-25 stovetop low
